Ingredients

– 3 chicken breasts, cut into small pieces

– 2 cups of chopped onions

– 1 chopped bell pepper

– 2 tablespoons of vegetable oil

– 1 teaspoon of taco seasoning

– 1 teaspoon of garlic salt

– 1 teaspoon of cumin

– 1 teaspoon of pepper

– 1/2 teaspoon of red pepper flakes

– 4 ounces (about 113 grams) of diced green chilies

– 2 to 3 cups of shredded Monterey Jack cheese

– 2 to 3 cups of shredded sharp Cheddar cheese

– 8 soft taco-size flour tortillas

– 2 tablespoons of butter, divided for use during cooking


Instructions

1-First, gather and prepare all ingredients, including the 3 chicken breasts cut into small pieces, 2 cups of chopped onions, 1 chopped bell pepper, and the seasonings like 1 teaspoon each of taco seasoning, garlic salt, cumin, and pepper.

2-Heat a large skillet over medium heat with 2 tablespoons of vegetable oil to cook the chicken until it’s tender and browned, which takes about 5-7 minutes.

3-Add the chopped onions, bell pepper, 4 ounces of diced green chilies, and seasonings to the skillet, stirring for a few minutes until everything mixes well and the flavors blend.

4-Lay out 8 soft taco-size flour tortillas and sprinkle 2 to 3 cups each of shredded Monterey Jack and sharp Cheddar cheese on half of them, then top with the cooked chicken mixture.

5-Fold the tortillas over the filling and cook in the skillet with the remaining 2 tablespoons of butter, divided, for 2-3 minutes per side until the tortillas are crispy and the cheese melts perfectly.
