Description
🥒 Zucchini Mozzarella Medley is a fresh, vibrant dish packed with garden flavors and melted mozzarella for a comforting yet light meal.
🧄 This quick and simple recipe uses minimal ingredients and cook time, perfect for a healthy weeknight dinner or side dish.
Ingredients
– 1 tablespoon olive oil
– 3 to 4 cups sliced zucchini or yellow squash (about 2 medium squash)
– 1 medium white or yellow onion, thinly sliced into half-moons
– 1 medium garlic clove, finely minced
– ½ teaspoon dried basil
– ¼ teaspoon dried oregano
– ¼ teaspoon salt
– 1 to 2 medium fresh garden tomatoes, cut into cubes or wedges
– 4 ounces fresh mozzarella or freshly grated mozzarella cheese
Instructions
1-First, heat the olive oil in a large skillet over medium heat until it’s hot. Then, add the zucchini, onion, garlic, dried basil, dried oregano, and salt. Cook this mix for about 5 to 6 minutes until the zucchini turns golden and the onions get translucent, stirring now and then to even out the cooking.
2-Next, toss in the tomatoes and spread the mozzarella cheese evenly over the top. Cover the skillet and let it cook for 1 to 2 more minutes until everything bubbles and the cheese melts just right.
3-Finally, take it off the heat and serve it up immediately for the best taste and texture. I always add a personal touch, like serving it with a side salad, to make it feel extra special.
Notes
🧀 Freshly grated mozzarella melts better than pre-shredded cheese.
🍅 Use fresh garden tomatoes for optimal flavor and juiciness.
⏲️ If using less ripe store tomatoes, add them earlier during cooking to allow juices to release before adding cheese.
