Ingredients
4 Tbsp salted butter, divided
340 g (ΒΎ lb) chicken breast or thigh, diced
1 medium yellow onion, diced
1 tsp garlic powder (or 2 cloves fresh garlic, minced)
2 green onions, sliced
2 Tbsp fresh thyme, chopped
1 tsp paprika
Β½ tsp cayenne pepper (adjust to taste)
2 cups (β480 ml) broth water or bone broth
1 Β½ cups (β360 ml) whole milk
1 lb (β450 g) short-cut pasta (rotini works well)
2 medium zucchinis, diced
β cup (β35 g) grated Parmesan cheese
1 Β½ cups (β170 g) shredded cheese blend (cheddar & Colby-Jack)
Salt and freshly ground black pepper, to taste
Instructions
1-First Step: Preheat your oven to 220 Β°C (425 Β°F) and prepare all ingredients by dicing the chicken, onion, and zucchinis, slicing green onions, and chopping thyme.
2-Second Step: SautΓ© chicken: Melt 2 Tbsp butter in a large pot over medium heat. Add the onion, diced chicken, a pinch of salt and pepper; cook about 5 minutes until the chicken begins to brown.
3-Third Step: Build flavor: Add the remaining 2 Tbsp butter, sliced green onions, chopped thyme, paprika, garlic powder, and cayenne. Cook 2 3 minutes, stirring, until fragrant and lightly golden.
4-Fourth Step: Create sauce and cook pasta: Pour in the broth and milk; bring to a gentle boil. Stir in the pasta, diced zucchini, and season with salt and pepper. Cook, stirring frequently, about 8 minutes or until the pasta is al dente (add an extra Β½ 1 cup liquid if the mixture looks dry).
5-Fifth Step: Combine: Remove the pot from the heat. Mix in the grated Parmesan and 1 cup of the shredded cheese blend.
6-Sixth Step: Bake: Transfer the mixture to an oven-safe dish. Sprinkle the remaining shredded cheese over the top. Bake for 20 minutes, or until the cheese is melted, bubbly, and lightly browned.
