Ingredients

– 1 1/2 pounds (approximately 680 grams) ground pork for the main dish

– 1 tablespoon olive oil for sautéing and adding moisture

– 3 scallions (thinly sliced, with white and green parts separated) for aromatic freshness

– 4 cloves minced garlic to enhance depth and aroma

– 1 1/2 tablespoons fresh minced or grated ginger brings the zesty spice and health benefits

– 1/3 cup packed light brown sugar for balancing acidity with subtle sweetness

– 3 tablespoons lime juice provides tangy brightness and helps tenderize

– 1 tablespoon sriracha adds a kick of heat

– Fine sea salt to taste for seasoning

– Freshly ground black pepper to taste for extra flavor

– 1 cup jasmine rice for the creamy coconut rice base

– 1 can coconut milk (about 13.5 ounces) makes the rice rich and creamy

– 1/2 teaspoon fine sea salt for the rice seasoning

– 1 teaspoon sugar to sweeten the rice slightly

– Chopped peanuts (amount as desired) for topping and crunch

Instructions

1-First, begin with the coconut rice since it takes longer combine jasmine rice, coconut milk, fine sea salt, and sugar in a pot. Bring it to a boil, then simmer until fluffy, about 15-20 minutes. Meanwhile, heat the olive oil in a skillet over medium heat.

2-Next, sauté the white parts of the scallions, minced garlic, and fresh ginger for 1-2 minutes until fragrant. Add the ground pork and cook it until it’s no longer pink, breaking it up as it browns. To enhance flavors, stir in the light brown sugar, lime juice, and sriracha, then cook undisturbed for 2 minutes to let it caramelize.

3-Stir everything again and cook for another 1-2 minutes, then season with fine sea salt and black pepper to taste. For a complete meal, serve the warm pork over the creamy coconut rice, topped with chopped peanuts, extra lime wedges, and fresh herbs like cilantro or mint.
