Ingredients

– 1 lb (about 450 g) yucca (cassava root)

– Vegetable oil (neutral oil with a high smoke point such as avocado, canola, or sunflower oil) for frying

– Salt to taste

– Optional seasoning: 1 teaspoon paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, 1 teaspoon dried oregano, ½ teaspoon lime zest, and a squeeze of lime juice


Instructions

Peel the yucca root: Remove the thick outer skin entirely using a sharp knife using a paper towel for grip helps. Rinse the peeled root thoroughly.

Slice evenly: Cut the peeled yucca into thin, uniform slices around 1/8 inch (3 mm) thick. A mandoline slicer works well to ensure safety and consistency.

Soak to remove starch: Soak slices in cold water for about 10 minutes to reduce excess starch and prevent browning. Drain well and dry completely using paper towels or a salad spinner.

Heat the oil: Fill a pan with 1-2 inches of vegetable oil and heat to 350-375ºF (175-190ºC) for frying.

Fry the slices: Cook yucca slices in small batches without overcrowding for 2–3 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Season immediately: While still hot, season with salt and any optional spices to help flavors adhere.

Alternative cooking methods: For air frying, preheat to 360–375ºF, cook in a single layer for 8–15 minutes, shaking halfway. For oven baking, preheat to 425–450ºF (220–230ºC), toss lightly with oil, bake on parchment-lined sheets for 5–8 minutes, flip, and bake an additional 5–15 minutes until crisp.

Serve: Enjoy warm or at room temperature with dips like salsa or guacamole, or simply as a snack.
