1 medium shallot, finely chopped

2 tablespoons all-purpose flour
1½ cups whole milk
1½ cups light cream
1 tablespoon white truffle oil
2 cups sharp white Cheddar cheese, shredded
8 to 14 ounces of chopped, cooked Maine lobster meat
1 tablespoon diced chives
1 cup grated Parmesan cheese
Optional: black or white truffle, shaved for garnish


Instructions

1. Preheat oven to 400ºF (200ºC). Bring a large pot of salted water to a boil. Cook pasta until just al dente, drain, and set aside.
2. In a medium saucepan over medium heat, melt the butter and sauté the shallot until translucent, about 6 minutes. Add garlic if using, and sauté until fragrant.
3. Incorporate the white truffle oil, then whisk in flour for a minute to form a roux.
4. Gradually add milk and cream, whisking continuously until the mixture thickens, about 5 minutes. Add Cheddar cheese and stir until melted.
5. Fold in lobster meat, 1 tablespoon of chives, and the cooked pasta. Transfer to a baking dish and top with Parmesan cheese.
6. Bake for 20 minutes or until the top is golden and bubbling. Garnish with shaved truffles and remaining chives. Serve warm.
