Instructions

1-Wash and dry all fresh produce carefully to ensure it’s clean.

2-Cube 4 cups of watermelon into bite-sized pieces and slice 2-3 ripe peaches.

3-Chop 1/4 cup of fresh basil leaves finely for even flavor distribution.

4-In a large bowl, mix the watermelon, peaches, basil, and crumbled feta cheese.

5-Prepare the vinaigrette by whisking together 1/4 cup champagne vinegar, 3 tablespoons olive oil, 3 tablespoons fig jam, 1 tablespoon honey (if using), 2 tablespoons water, and seasonings to taste.

6-Drizzle the vinaigrette over the salad and toss gently.

7-Chill in the refrigerator for 15-20 minutes before serving, and add 1/4 cup pistachios for crunch.
