Description

πŸ‰ This Watermelon Mint Salad delivers refreshing summer flavors that are light, hydrating, and perfect for warm weather.
🌿 The combination of crisp watermelon, zesty lime, and fresh mint offers a vibrant, healthy option for any meal or gathering.

Ingredients

Scale

8 to 10 cups watermelon, cut into 1 Β½-inch cubes

Juice of 1 to 2 limes

3 tablespoons fresh mint, minced

Agave nectar for added sweetness

Flaky sea salt

Vegan feta cheese

Fresh basil

Leafy greens such as arugula or spinach

Thinly sliced red onion or shallots

Chopped English or Persian cucumber

Halved cherry tomatoes

Black olives

Avocado, sliced or diced

Strawberries

Raspberries

Peaches

Blueberries

Cherries

Finely sliced jalapeΓ±o for a spicy kick

Instructions

1-First, slice the watermelon in half crosswise and remove the peel and white flesh by laying it flat and cutting through the sides. Then, chop it into 1-inch chunks for the base of your salad. This method keeps the pieces uniform and easy to eat.

2-Next, rinse and finely chop the mint, and juice the limes, optionally zesting them for extra flavor. Combine the watermelon cubes, lime juice, and minced mint in a large bowl, tossing until thoroughly mixed. Add any optional ingredients like cucumber or berries as desired to mix things up.

3-For the best flavor, refrigerate the salad for at least 30 minutes before serving. This lets the tastes blend together nicely.

Notes

πŸƒ Adjust mint and lime juice to your taste and add lime zest for additional brightness.
πŸ‰ Don’t discard the watermelon rind; it can be used in pickles, jams, stir-fries, or composted.
❄️ Avoid freezing the salad to maintain texture, though frozen watermelon works well in drinks and slushies.
