1 pound (450 g) lean ground beef
1 small onion, diced
1 package (1 ounce / about 28 g) taco seasoning mix
2/3 cup (160 ml) water
1 can (10 ounces / 284 g) enchilada sauce
1 can (15 ounces / 425 g) pinto beans, drained and rinsed
4 cups (about 9 ounces / 255 g) corn chips (such as plain or flavored corn chips)
2 cups (about 200 g) shredded Mexican blend cheese (cheddar, Monterey Jack, etc.)
1 green onion, chopped (for garnish)
Optional: 1 can (10 ounces / 284 g) diced tomatoes with green chiles
Optional: 1 can (15 ounces / 425 g) whole kernel corn, drained
Optional: 1 clove garlic, minced
Optional toppings: shredded lettuce, diced tomatoes, jalapeños, cilantro, sour cream, guacamole, pico de gallo, sliced black olives


Instructions

1. Preheat oven to 350°F (175°C).
2. In a skillet, brown the ground beef over medium heat. Add diced onion (and garlic if using), cooking until soft and fragrant.
3. Stir in taco seasoning mix and water; simmer for about 5 minutes until flavors meld and liquid reduces slightly. Optionally, add diced tomatoes with green chiles here and simmer until thickened.
4. Stir in drained pinto beans (and corn if using), combine well.
5. In a greased 9×13 inch (23×33 cm) baking dish, layer half of the meat mixture evenly. Pour half of the enchilada sauce over the meat. Scatter half of the corn chips on top.
6. Repeat layers with remaining meat mixture, enchilada sauce, and corn chips.
7. Top the entire casserole with shredded cheese.
8. Bake for 15–20 minutes until the cheese is melted and bubbly, and edges begin to brown.
9. Let rest for 5 minutes before garnishing with chopped green onions and any desired additional toppings. Serve warm.

Notes

🌽 Toast corn chips briefly before layering to boost crunch and reduce sogginess.
🥄 Let the meat mixture cool slightly before layering to prevent premature cheese melting.
