Ingredients

1 lb (approximately 450 grams) ground beef

1 lb (approximately 450 grams) ground pork, turkey, or bison

3 medium carrots, peeled and cut into thirds

2 heaping handfuls of spinach

1 small onion, peeled and cut in half

2 to 3 garlic cloves

Β½ teaspoon sea salt

ΒΌ teaspoon coarse ground pepper


Instructions

1-Preheat the oven to 350Β°F (175Β°C) and line a 9Γ—13-inch (23Γ—33 cm) glass baking dish with parchment paper.

2-Place the carrots, spinach, onion, and garlic into a food processor and process until finely chopped, about 1 to 2 minutes.

3-In a large mixing bowl, combine the processed vegetables, ground meat, and seasonings. Mix thoroughly by hand to evenly distribute.

4-Scoop small handfuls of the mixture (about golf-ball size) and roll into firm balls. Arrange evenly on the prepared baking dish.

5-Bake for 35 to 45 minutes or until the meatballs are fully cooked.
