Ingredients

– 1 1/2 cups all-purpose flour

– 2 large eggs at room temperature

– 1 tablespoon pure vanilla extract

– 2/3 cup plain whole-milk yogurt at room temperature

– 1/2 cup strawberry puree

– 3/4 cup unsalted butter softened to room temperature

– a pinch of salt

– 3 cups confectioners’ sugar


Instructions

1-First, preheat your oven to 350Β°F (175Β°C) and line a cupcake tin with paper liners to get ready for that fluffy batter.

2-In a large bowl, whisk together the flour, baking powder, and salt as the base for your cupcakes.

3-Next, in another bowl, mix the yogurt, sugar, eggs, and vanilla extract until smooth and combined.

4-Gradually fold the dry ingredients into the wet mixture, being careful not to overmix for a tender crumb.

5-Spoon the batter into the liners, filling each about 2/3 full, and bake for 18-20 minutes until a toothpick comes out clean.

6-While the cupcakes cool, prepare the frosting by blending the strawberry puree with softened butter, a pinch of salt, and confectioners’ sugar until it’s light and fluffy.
