– 4 large eggs

– 1 teaspoon baking soda

– 1 teaspoon white vinegar

– 1 cup raisins (optional)


Instructions

1-First, gather your ingredients and mix the cheese, 4 large eggs, 3/4 cup all-purpose flour, 3 tablespoons sugar, and 1/2 teaspoon salt in a large bowl. In a separate small bowl, combine 1 teaspoon baking soda and 1 teaspoon white vinegar until it fizzes, then add this to the cheese mixture for that light texture. Use a hand mixer to blend everything evenly, and don’t forget to fold in the 1 cup raisins if you’re using them it’s my favorite part for a bit of surprise in every bite.

2-Next, heat 2-3 tablespoons of extra light olive oil in a skillet over medium heat. Pour 1/2 cup flour into a small bowl for dredging. Take a heaping tablespoon or a flat ice cream scoop of the mixture, coat it with flour, gently shape it into a patty, and shake off any excess flour to keep it from getting too dry.

3-Then, fry the patties in the hot oil until they turn golden brown, which takes about 3-4 minutes per side. Once they’re done, serve them warm with toppings like fresh fruit, jam, sour cream, or powdered sugar. I like to share how using dry cheese keeps the batter from becoming too liquid, making your syrniki hold their shape perfectly.

4-Drain any excess liquid from the cheese if needed for the best results.

5-Mix all wet and dry ingredients thoroughly before shaping.

6-Adjust heat if the oil gets too hot to prevent burning.
