– 1 large chicken breast, cut into 1/2-inch by 1-inch pieces
– 2 cups white rice, rinsed well and drained
– 1 large carrot, grated

– 2 tablespoons unsalted butter
– 1/4 cup ketchup
– 2 1/2 cups water or low sodium chicken broth
– 1 teaspoon salt
– 1/8 teaspoon freshly ground black pepper
– 1/8 teaspoon Cayenne pepper
Instructions
1-Getting started with Ukrainian chicken plov: Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat, then add the chicken pieces and cook until they turn golden and are fully done. This sets the base for all the flavors to build upon. Next, toss in the finely chopped onion and let it cook for about 3 minutes to soften and release its sweetness.
2-Once the onion is ready: add the grated carrot and sauté for another 2 minutes to blend the vegetables nicely. Stir in the 2 tablespoons of unsalted butter and 1/4 cup of ketchup, mixing until the butter melts and everything combines smoothly. Now, add the 2 cups of rinsed rice, along with the salt, black pepper, and Cayenne pepper, and stir thoroughly to coat the rice evenly.
3-Transfer the whole mixture to a rice cooker: and pour in 2 1/2 cups of water or chicken broth, then select the “White rice” setting to cook. If you don’t have a rice cooker, put everything into a pot with a tight lid and cook over medium-low heat for about 20 minutes, or until the liquid is fully absorbed. Let it rest for a bit before serving to let the flavors settle. This method keeps things simple and ensures great results every time.
