Ingredients
– 4 boneless skinless chicken breasts (6 ounces each)
– 1 teaspoon Italian seasoning
– 1 teaspoon salt
– ½ teaspoon freshly ground black pepper
– 3 tablespoons olive oil
– 4 garlic cloves, minced
– ¼ cup finely chopped yellow onion
– ½ cup sun-dried tomatoes, thinly sliced
– 2 cups baby spinach
– 1 ½ cups heavy cream
– ¼ cup freshly grated parmesan cheese
Instructions
1-Step 1: Prepare and Season the Chicken Start by patting your chicken breasts dry with paper towels. This crucial step ensures you get a beautiful golden sear rather than steaming the meat. If your chicken breasts are particularly thick, consider butterflying them or pounding them to an even thickness of about ½ inch for faster, more even cooking. Season both sides of each chicken breast generously with the Italian seasoning, salt, and freshly ground black pepper. Rub the seasonings in gently with your hands to help them adhere to the meat. The Italian seasoning blend typically contains oregano, thyme, basil, and rosemary, which will infuse the chicken with those classic Mediterranean flavors.
2-Step 2: Sear the Chicken to Golden Perfection Heat 2 tablespoons of olive oil in a large skillet over medium heat. Wait until the oil shimmers slightly, indicating it’s hot enough for searing. Carefully place the seasoned chicken breasts in the skillet, making sure not to overcrowd the pan. If your skillet is smaller, cook the chicken in two batches. 4-Step 4: Create the Creamy Sauce Stir in the 2 cups of baby spinach and cook until it just begins to wilt, which should take about 30 seconds to 1 minute. The spinach will continue wilting in the hot sauce, so don’t overcook it at this stage. Pour in the 1 ½ cups of heavy cream and add the ¼ cup of freshly grated parmesan cheese. Stir everything together and bring the mixture to a gentle simmer. Let it bubble lightly for 2 to 3 minutes, which allows the sauce to reduce slightly and thicken. The parmesan will melt into the cream, creating a silky, luxurious texture. For extra depth of flavor, you can add a splash of white wine when sautéing the onions to deglaze the pan. 5-Step 5: Finish and Serve Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some of the sauce over the chicken and let everything cook together for about 5 minutes until the chicken is heated through and fully cooked. The internal temperature should reach 165°F. Remove from heat and let the dish rest for a couple of minutes. The sauce will continue thickening as it cools slightly.
