30 grams natural unsweetened cocoa powder

1/4 teaspoon baking powder

1/4 teaspoon table salt

85 grams melted unsalted butter

2 large eggs at room temperature

1 teaspoon vanilla extract

90 grams milk chocolate chips

Prepared caramel sauce (from above)

90 grams chopped pecans (toasted for enhanced flavor, optional)

90 grams milk chocolate chips

45 ml heavy cream

A sprinkle of sea salt


Instructions

1-Step 1: Making the Caramel Dissolve 200 grams granulated sugar, 60 ml water, 60 ml light corn syrup, and 1/4 teaspoon table salt in a saucepan over medium-low heat. Cook until it reaches 175-179Β°C (340-345Β°F), then remove from heat. Carefully stir in 120 ml heavy cream, 56 grams unsalted butter, and 1 teaspoon vanilla extract. Let it cool completely for the perfect consistency heavy cream ensures it sets up just right.

2-Step 2: Preparing the Brownie Batter Whisk together the dry ingredients: 95 grams all-purpose flour, 30 grams natural unsweetened cocoa powder, 1/4 teaspoon baking powder, and 1/4 teaspoon table salt. In another bowl, combine 85 grams melted unsalted butter, 200 grams granulated sugar, 2 large eggs at room temperature, and 1 teaspoon vanilla extract. Fold in 90 grams milk chocolate chips, then spread the batter evenly in a greased 23Γ—23 cm (9Γ—9 inch) pan.

3-Step 3: Baking and Assembling Bake at 175Β°C (350Β°F) for 23-25 minutes until a toothpick comes out mostly clean. After cooling briefly, spread the caramel over the brownies and add 90 grams chopped pecans evenly. For the ganache, microwave 90 grams milk chocolate chips with 45 ml heavy cream, whisk until smooth, and drizzle over the pecans. Finish with a sprinkle of sea salt and let it set before cutting into 12 squares.
