Ingredients

1 pound macaroni

2 tablespoons apple cider vinegar

2 carrots shredded

ΒΌ cup shredded onion (optional)

2 Β½ cups mayonnaise

ΒΌ cup milk

2 teaspoons sugar

Kosher salt to taste

Ground black pepper to taste


Instructions

1-Cook the macaroni: Boil the elbow macaroni in salted water until al dente, approximately 7-8 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.

2-Add vinegar: Place the cooled macaroni in a large bowl and sprinkle with apple cider vinegar. Add shredded carrot and shredded onion if using, then toss to combine.

3-Prepare the dressing: In a separate small bowl, whisk together mayonnaise, milk, and sugar until smooth.

4-Combine: Fold the dressing mixture into the macaroni until noodles are evenly coated.

5-Season: Season with salt and pepper to taste, mixing until well incorporated.

6-Chill: Cover and refrigerate for at least 4 hours, ideally overnight. Before serving, gently stir and add additional milk if needed for desired consistency, up to 1 to 2 tablespoons.
