Description

🍝 This quick tortellini Bolognese packs hearty meat, cheese‑filled pasta and a rich tomato‑pesto sauce for a satisfying weeknight dinner.
⏱️ Ready in under 50 minutes, it’s perfect for busy evenings when you crave comfort without the fuss.


Ingredients

– 4 oz (approximately 115 g) spicy pepperoni, chopped

– 1 yellow onion, roughly chopped

– 1 lb (approximately 450 g) ground beef

– ¾ lb (approximately 340 g) spicy Italian sausage, removed from casings and crumbled

– ½ cup (approximately 75 g) celery, finely diced

– 4 cloves garlic, minced

– 1 tbsp dried oregano

– 3 tbsp tomato paste

– 2 x 24-oz (approximately 680 ml each) jars marinara sauce (total 48 oz / 1.4 L)

– ½ cup (approximately 120 ml) water or milk, added to sauce as needed

– 3 tbsp basil pesto

– ⅓ cup (approximately 80 g) cream cheese, softened

– 1 lb (approximately 450 g) cheese-filled tortellini

– 1 cup (approximately 100 g) grated Parmesan cheese

– Salt and freshly ground black pepper, to taste


Instructions

1-Heat a large pot or deep skillet over medium heat and crisp the chopped spicy pepperoni for about 5 minutes, letting those flavors build a strong base.

2-Add the onion, ground beef, spicy Italian sausage, celery, garlic, oregano, salt, and pepper. Cook while breaking up the meat until it’s browned, which takes around 10 minutes.

3-Stir in the tomato paste and let it cook for another 5 minutes to deepen the flavors of your Bolognese sauce.

4-Pour in the marinara sauce along with the ½ cup of water or milk, then season as needed. Simmer on low heat for 10 to 15 minutes so the sauce thickens nicely.

5-Blend in the softened cream cheese and basil pesto until everything melts together smoothly, creating that creamy pasta magic.

6-While the sauce simmers, boil the cheese-filled tortellini in salted water until it’s al dente usually 3 to 5 minutes then drain it.

7-Finally, toss the cooked tortellini with the sauce and fold in the grated Parmesan cheese for a cheesy finish. Serve hot with extra Parmesan on top for that perfect touch.

Notes

🌶️ Adjust the heat by using milder sausage or adding extra pepperoni for a spicier bite.
🍷 Deglaze the meat with a splash of white wine instead of water/milk for deeper flavor.
