Ingredients
22 ounces cherry tomatoes sliced in half
16 ounces spaghettini or spaghetti
1 sliced zucchini
½ cup roughly chopped fresh basil leaves
6 sliced garlic cloves
1 tablespoon salt for pasta water
1 teaspoon salt for vegetables
3 tablespoons extra virgin olive oil
Instructions
1-First, bring a large pot of water to a boil and add 1 tablespoon of salt. Cook the 16 ounces of spaghettini or spaghetti until al dente as per the package, then reserve ½ cup of hot pasta water before draining.
2-Next, in a large pan over medium heat, warm 3 tablespoons of extra virgin olive oil and sauté the sliced zucchini for 4 to 5 minutes until it softens.
3-Add 6 sliced garlic cloves, the 22 ounces of cherry tomatoes sliced in half, and 1 teaspoon of salt. Keep sautéing for about 3 to 5 minutes until the tomatoes release their juices and form a sauce.
4-Stir in the reserved pasta water and ½ cup of roughly chopped fresh basil leaves to blend everything together.
5-Toss the cooked pasta in the sauce to coat it thoroughly, then serve immediately for the best taste.
