1/4 cup chopped fresh basil, plus more for garnish

1 tablespoon sugar, or to taste

1/2 teaspoon black pepper, or to taste

1/2 cup heavy whipping cream, or to taste

1/3 cup freshly grated parmesan cheese, plus more for garnish


Instructions

1-First, heat a non-reactive pot over medium heat and melt 4 tablespoons of unsalted butter. Then, sauté the finely chopped yellow onions for 10 to 12 minutes until they soften and turn golden, adding a sweet base to the soup. Next, add the minced garlic and cook for another minute to release its fragrant aroma, setting the stage for the rest of the ingredients.

2-Stir in the crushed tomatoes with their juice, chicken stock or vegetable broth, chopped fresh basil, sugar, and black pepper. Bring the mixture to a boil, then reduce the heat, partially cover, and simmer for 10 minutes to let the flavors meld. For a chunky texture, leave it as is, but for that creamy finish, use an immersion blender or a regular blender in batches to puree until smooth, then return it to the pot.

3-Finishing Touches: Once blended, stir in the heavy whipping cream and freshly grated parmesan cheese, and bring it back to a simmer. Taste and season with salt and pepper as needed to balance the flavors. Finally, serve the soup in warm bowls, garnished with extra parmesan and fresh basil for a beautiful presentation.
