– 1 cup frozen cooked shrimp, tail and shell off (size 91/110)

– 3/4 cup frozen peas

– 1/3 cup chopped unsalted peanuts

– Salt and pepper to taste

– Green onions for garnish

– 1/2 cup creamy peanut butter (natural recommended)

– 3 tablespoons low sodium soy sauce

– 2 tablespoons honey

– 2 tablespoons seasoned rice vinegar

– 2 tablespoons fresh lime juice

– 3 cloves garlic, minced

– 1 tablespoon sesame oil

– 2 teaspoons sriracha

– 2 teaspoons chili garlic sauce

– 1/4 teaspoon red pepper chili flakes (optional)


Instructions

1-First, cook the noodles according to the package directions and set them aside to cool a bit.

2-In a bowl, whisk together all the peanut sauce ingredients until smooth things like peanut butter, soy sauce, honey, and garlic blend into a creamy wonder.

3-Heat the avocado oil in a pan, add carrots and bell pepper, and cook for about 5 minutes while stirring occasionally.

4-Next, toss in the shrimp and cooked noodles, letting them heat through for 4-5 minutes.

5-Stir in the frozen peas and half a cup of that homemade peanut sauce to coat everything nicely.

6-For the finishing touch, garnish with chopped peanuts and green onions right before serving to add crunch and freshness.
