Ingredients
Pasta shells (8-12 oz)
Ground beef (1 lb)
Taco seasoning (1 packet or homemade)
Cream cheese (4-8 oz)
Shredded cheese (cheddar or Mexican blend)
Diced tomatoes (1 can)
Corn (optional)
Black beans (optional)
Bell peppers (optional)
Cilantro (optional, for garnish)
Instructions
1. Boil a pot of water and cook the pasta shells according to the package instructions, then drain and set aside.
2. In a large skillet or pot, cook the ground beef over medium heat until browned, breaking it up as it cooks.
3. Drain excess grease from the cooked beef if necessary.
4. Add taco seasoning and stir to coat the beef evenly, then pour in a small amount of water (as directed on the taco seasoning packet) to help mix the flavors.
5. Add diced tomatoes (with juices) to the skillet and stir well to combine.
6. Reduce the heat to low and add the cream cheese, stirring until it melts and blends into the sauce, creating a creamy texture.
7. Mix in any optional ingredients like corn, black beans, or diced bell peppers for extra flavor and texture.
8. Add in the cooked pasta shells and stir until they are well coated with the creamy taco sauce.
9. Sprinkle shredded cheese over the pasta mixture and stir until melted and fully incorporated.
10. Taste and adjust seasoning if needed, adding more taco seasoning or salt as desired.
11. If desired, transfer the mixture to a baking dish, top with extra cheese, and broil for a few minutes until melted and bubbly.
12. Remove from heat and garnish with chopped cilantro or your favorite taco toppings.
13. Serve warm and enjoy your creamy taco pasta.
Notes
Use room temperature cream cheese for a smoother and creamier sauce that blends easily with the other ingredients.
Add a splash of pasta water to the sauce if it feels too thick, helping to create a silky texture that coats the pasta perfectly.
For extra flavor, mix in fire-roasted diced tomatoes or green chilies to give the dish a slight kick and extra depth.
