1 lb (approximately 450 grams) lean ground beef
1 red bell pepper, chopped
½ medium onion, finely chopped
3 teaspoons taco seasoning
1 teaspoon dried oregano
2 cloves garlic, minced
½ teaspoon salt
2 cups jarred tomato salsa
1 can (590 ml or 19 oz) black beans, rinsed and drained
6 large tortillas
3 cups shredded cheese (cheddar preferred)
Optional: 1 can corn, drained
Optional: crushed tortilla chips (about 2 cups)
Optional: extra vegetables like kale, mushrooms, zucchini, spinach, or carrots
Optional: spice additions like cayenne powder, red pepper flakes, jalapeños, or hot sauce


Instructions

1. Preheat oven to 350°F (175°C).
2. In a large skillet over medium-high heat, cook ground beef, bell pepper, and onion until beef is browned and vegetables are tender (5-7 minutes).
3. Add taco seasoning, oregano, garlic, and salt. Cook 1 minute.
4. Stir in salsa, black beans, and corn if using; remove from heat.
5. In a 9×13 inch baking dish, layer two tortillas.
6. Spread one-third of meat and bean mixture over tortillas, sprinkle one-third of cheese.
7. Repeat layers two more times (two tortillas, meat mixture, cheese).
8. Bake uncovered for 15-20 minutes until heated through and cheese melts.
9. Slice and serve, optionally topped with fresh tomatoes, cilantro, sour cream, avocado, scallions, or olives.

Notes
