Ingredients
1 cup mashed sweet potatoes (about 1 medium sweet potato)
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1/2 cup milk
For the Milk Soak:
1/2 cup sweetened condensed milk
1/2 cup evaporated milk
1/4 cup dark rum
For the Topping:
Whipped cream (freshly made)

Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the mashed sweet potatoes, sugar, and vegetable oil until smooth.
4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
5. Alternately fold in the flour mixture and milk to the sweet potato mixture, starting and ending with the flour, mixing gently until no dry streaks remain.
6. Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
7. While the cake bakes, whisk together the sweetened condensed milk, evaporated milk, and dark rum.
8. Once the cake is cooled slightly, use a fork to poke holes all over the surface and slowly pour the milk mixture over the cake. Allow it to absorb gradually.
9. Refrigerate the cake for at least 4 hours, preferably overnight, to achieve a moist, pudding-like texture.
10. Before serving, top with freshly whipped cream and sprinkle ground cinnamon.
