4 to 5 large sweet potatoes (orange yams)

3 large eggs

1/2 cup evaporated milk (or substitute with cream or half and half)

1 teaspoon vanilla extract

1/2 cup granulated sugar

1/2 teaspoon salt

1/4 cup butter, melted

3 tablespoons butter

1/4 cup flour

1 cup brown sugar

1 cup chopped pecans


Instructions

1-Place sweet potatoes in a large pot with enough water to cover them slightly more than halfway. Bring to a boil, then simmer covered until fork-tender, about 20 to 40 minutes, depending on size. Drain and cool.

2-Peel the warm potatoes and place in a large bowl.

3-Add eggs, evaporated milk, vanilla, granulated sugar, salt, and melted butter. Mash until smooth using a potato masher, then mix with an electric mixer at low speed for about 45 seconds to avoid over-mixing.

4-Pour mixture into a lightly greased casserole dish (8Γ—11 inches, 9Γ—13 inches, or a deep 10-inch pie pan).

5-For the topping, combine flour, brown sugar, and chopped pecans. Add butter and blend with a fork or pastry blender until well mixed. Sprinkle evenly over the sweet potato mixture.

6-Bake at 350Β°F (175Β°C) for 35 to 40 minutes until topping is golden and casserole is heated through.

Notes

🌟 For a marshmallow topping, substitute pecans with miniature marshmallows and bake for about 25 minutes until browned and puffed.
