Ingredients

2 cups yellow squash, chopped finely

1 cup onion, chopped finely

2 stalks green onion, chopped

2 eggs, beaten

1 teaspoon salt

1 teaspoon black pepper

1/2 cup all-purpose flour

1 tablespoon all-purpose flour (additional)

Oil for cooking (amount as needed)


Instructions

1-Heat about 2 tablespoons of cooking oil in a medium sautรฉ pan or skillet over medium heat.

2-Finely chop the yellow squash and both types of onion. Combine them in a large bowl with the beaten eggs, the 1/2 cup plus the additional 1 tablespoon of all-purpose flour, salt, and black pepper.

3-Stir the mixture thoroughly until all ingredients are well combined.

4-Drop 2 tablespoons of the squash mixture per patty into the hot skillet. Cook multiple patties at a time, ensuring they do not touch each other or crowd the pan.

5-Pan-fry each patty for 2-3 minutes on each side, until they are golden brown on the outside.

6-Cook patties in batches as needed.
