Description

🌽 These pull‑apart sliders pack sweet corn, creamy cheese dip, and a spicy kick for a crowd‑pleasing snack.

Ingredients

– 2 Tbsp Chili powder

– 2 tsp Smoked paprika

– ½–2 tsp Cayenne pepper (adjust to heat preference)

– 2 Tbsp + 2 Tbsp Extra-virgin olive oil (for sauté and butter-spice mix)

– 1 medium Yellow onion, finely diced

– 2 cups Corn kernels (fresh or frozen)

– 2 Garlic cloves, minced

– pinch Kosher salt (plus extra as needed)

– pinch Freshly ground black pepper (plus extra as needed)

– 4 oz Cream cheese, softened (≈ 115 g)

– ¼ cup Sour cream (or Greek yogurt) (≈ 60 ml)

– 1 package Dinner rolls (soft, 12-count) (≈ 12 rolls)

– 3 Tbsp Salted butter

– ⅓ cup Olive-oil mayonnaise (≈ 80 ml)

– 2 Tbsp Fresh lime juice

– ¼ cup Fresh cilantro, chopped

– 1½ cups Shredded Monterey-Jack or Pepper-Jack cheese (≈ 170 g)

– pinch chili flakes (for butter-spice mix)


Instructions

1-Start: pre-heating your oven to 400°F (200°C) to set the stage for that golden finish. In a small bowl, mix up the spice blend with chili powder, smoked paprika, cayenne, and a pinch of salt to add that kick we all love.

2-Next, heat 2 Tbsp of olive oil in a skillet over medium-high heat and toss in the diced onion, cooking it for about 5 minutes until it softens up. Stir in the corn kernels, minced garlic, 1 tsp of the spice blend, and a pinch each of salt and pepper, then cook for another 5 minutes until the corn gets tender. Reduce the heat to low, add the softened cream cheese, and stir until it’s fully melted and smooth before folding in the sour cream or Greek yogurt to create that creamy dip base.

3-In another skillet, melt 3 Tbsp of salted butter until it’s golden, then mix in the rest of the spice blend, a pinch of chili flakes if you like it spicy, and a pinch of salt, cooking for just 1 minute. For the lime-mayo drizzle, whisk together the mayonnaise, lime juice, and a pinch of salt in a separate bowl. Now, assemble the sliders by lining a baking sheet with parchment, placing the bottom halves of the rolls on it, spooning on the corn dip, sprinkling with cilantro and cheese, and drizzling half the lime-mayo and spicy butter mixture.

4-Cover with the top halves of the rolls, then bake covered with foil for 10 minutes, uncover, and bake another 10 minutes until the cheese melts and the tops brown. Finish by drizzling the remaining mixtures on top and serve hot. This step-by-step approach not only makes the process fun but also ensures your street corn dip sliders turn out perfect every time, especially if you’re making them for a crowd.
