Ingredients

– 50 grams warm water

– 1 1/2 teaspoons yeast

– 280 grams flour for the donuts

– 50 grams sugar for the donuts

– 50 grams butter for the donuts

– 2 egg yolks for the donuts

– 40 grams soft cream cheese for the donuts

– 3 liters neutral oil for frying

– 150 grams cream cheese for the cheesecake filling

– 50 grams powdered sugar for the cheesecake filling

– 80 grams strawberry jam for the cheesecake filling

– 6 fresh strawberries for decoration

– 1 tablespoon powdered sugar for decoration


Instructions

1-Getting started with Strawberry Cheesecake Stuffed Donuts: First, mix 50 grams of warm water with 1 1/2 teaspoons of yeast and 1 tablespoon of sugar, then let it rest for 10 minutes until it’s frothy. This step kickstarts the dough and makes the donuts extra fluffy, just like I do in my own kitchen.

2-Next: in a bowl, combine 280 grams of flour and 50 grams of sugar. Add 2 egg yolks, 40 grams of soft cream cheese, and 50 grams of butter, then mix in the frothy yeast mixture. Knead the dough for 15-20 minutes on medium speed with a dough hook to get that perfect texture it’s my favorite part because it feels so hands-on.

3-Once kneaded, place the dough in a greased bowl and let it proof in a warm spot, around 29°C or 84°F, for 1 hour and 30 minutes. After that, roll the dough to 0.25 cm thickness and cut it with a 6 cm diameter cutter, then proof it again for 30 minutes until it’s puffy and about 0.5 cm thick. Heat 3 liters of neutral oil to 180°C (356°F) and maintain it at 175°C (347°F) for frying, cooking the donuts for about 2 minutes per side until golden brown.

4-Drain the excess oil on paper towels, then for the filling, mix 150 grams of cream cheese, 50 grams of powdered sugar, and 80 grams of strawberry jam. Cool the donuts slightly and fill them using a piping bag. Finally, decorate with 6 fresh strawberries, a spoonful of jam, and dust with 1 tablespoon of powdered sugar. The whole process takes about 2 hours and 1 minute, with 15 minutes prep and 6 minutes cooking, yielding 6 delicious donuts.
