Ingredients

– 2 cups (≈ 240 g) uncooked elbow macaroni (½ lb.)

– 2 Tbsp (28 g) butter

– 2 Tbsp (16 g) all-purpose flour

– ½ cup (120 ml) heavy cream

– 1 cup (240 ml) milk

– ½ tsp mustard powder

– ¼ tsp onion powder

– ¼ tsp salt, plus a pinch of pepper

– ½ tsp hot sauce (optional, for subtle heat)

– 1 ½ cups (≈ 150 g) shredded cheddar cheese


Instructions

1-Bring a large pot of salted water to a boil. Add the 2 cups (≈ 240 g) uncooked elbow macaroni and cook according to the package directions. Once done, drain and set aside.

2-In the same pot, melt the 2 Tbsp (28 g) butter over medium heat. Sprinkle in the 2 Tbsp (16 g) all-purpose flour and whisk for 1-2 minutes until lightly golden to form a roux.

3-Gradually whisk in the ½ cup (120 ml) heavy cream and 1 cup (240 ml) milk in a slow stream, stirring constantly to keep it smooth. Bring to a gentle boil, then lower to a simmer.

4-Stir in the ½ tsp mustard powder, ¼ tsp onion powder, ¼ tsp salt, plus a pinch of pepper, and ½ tsp hot sauce if you want a bit of heat.

5-Reduce heat to low and fold in the 1 ½ cups (≈ 150 g) shredded cheddar cheese until the sauce is glossy and fully melted.

6-Toss the cooked macaroni into the cheese sauce and mix until evenly coated. Serve immediately for the best taste.

🧀 Shred cheese from a block rather than using pre‑shredded varieties for a smoother melt and richer flavor.
