1 (10.5-ounce) can condensed cream of chicken soup (or cream of mushroom or celery soup, preferably unsalted)
1 cup milk (whole milk recommended)
1 large egg
1 teaspoon Cajun seasoning
Salt and black pepper to taste


Instructions

1. Prepare cornbread according to package directions or use homemade cornbread. Let cool completely, then crumble into a large bowl.
2. Preheat oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
3. In a large skillet, heat butter and olive oil over medium-high heat. Add chopped squash, onion, celery, and bell pepper; sauté for 5-10 minutes until tender. Drain excess moisture.
4. In the bowl with crumbled cornbread, combine cooked vegetables, cream of chicken soup, milk, egg, Cajun seasoning, salt, and black pepper. Mix thoroughly.
5. Transfer mixture to the prepared baking dish and bake for 40 minutes until set and lightly browned on top.
