Ingredients
– 4 seeded and chopped jalapenos
– 3 1/2 cups of canned pineapple chunks (with the syrup reserved)
– 1 1/2 cups of vinegar
– 1 cup of firmly packed brown sugar
– 1 teaspoon of salt
– 1/2 cup of raisins
– 2 tablespoons of finely chopped gingerroot
– 2 crushed garlic cloves
Instructions
1-First, add the reserved pineapple syrup to a saucepan along with the 4 seeded and chopped jalapenos, 1 1/2 cups of vinegar, 1 cup of firmly packed brown sugar, 1 teaspoon of salt, 1/2 cup of raisins, 2 tablespoons of finely chopped gingerroot, and 2 crushed garlic cloves.
2-Bring the mixture to a boil over medium heat, stirring occasionally to blend the flavors.
3-Once boiling, reduce the heat and simmer for 10 minutes to let the ingredients meld together.
4-Next, add the 3 1/2 cups of canned pineapple chunks and continue simmering for about 30 minutes or until the chutney thickens. Depending on the liquid, you might simmer up to an hour for the best results.
5-Finally, remove from heat, let it cool, and store in airtight containers. This step ensures the chutney is ready for various uses, like topping pulled pork tacos.
