Description

🍠 Enjoy crispy, flavorful sweet potato fries tossed with garlic, Parmesan, and Manchego cheese.
πŸ”₯ Paired with a spicy aioli sauce, this recipe offers a perfect balance of heat, creaminess, and cheesy richness.

Ingredients

Scale

4 sweet potatoes, cut into matchsticks

3 tablespoons olive oil

1 teaspoon smoked paprika

1/4 cup fresh oregano

2 tablespoons butter

2 cloves garlic

1/2 cup freshly grated parmesan cheese

1/4 cup manchego cheese

1/2 cup mayonnaise

12 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

1/21 teaspoon cayenne pepper

Instructions

First Step: Preparation First, preheat your oven to 425 degrees Fahrenheit or your air fryer to 400 degrees Fahrenheit. Wash and dry the 4 sweet potatoes, then cut them into matchsticks. Gather 3 tablespoons olive oil, 1 teaspoon smoked paprika, salt, and pepper on a large baking sheet, ensuring not to overcrowd; use two baking sheets if necessary. This step sets the stage for even cooking and crispiness.

Second Step: Tossing and Coating Next, toss the sweet potato matchsticks with 3 tablespoons olive oil, 1 teaspoon smoked paprika, salt, and pepper in a bowl. Make sure each piece is well-coated for that perfect flavor. If you’re aiming for extra crunch, you can add a light dusting of something like cornstarch at this point, though it’s optional.

Third Step: Baking Bake the fries for 15-20 minutes, then flip them and toss with 1/4 cup fresh oregano before baking for another 15-20 minutes until they’re tender and crisp. Keep an eye on them to avoid overcooking. In a separate pan, melt 2 tablespoons butter with 2 cloves garlic over medium heat.

Fourth Step: Finishing Touches Once out of the oven, toss the fries with the garlic butter mixture, 1/2 cup freshly grated parmesan cheese, and 1/4 cup manchego cheese. For the aioli, mix 1/2 cup mayonnaise, 1-2 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard, 1 clove minced garlic, and 1/2-1 teaspoon cayenne pepper until smooth, then season with salt to taste. Serve right away with the aioli and ketchup for a complete dish.

Notes

🍟 Cut sweet potatoes into thin matchsticks for extra crispiness.
🧺 Avoid overcrowding baking sheets to prevent soggy fries.
πŸ§„ Use fresh minced garlic for the most flavor, or pre-minced for convenience.
