Description

Ingredients

– ½ to 1 pound ground beef or other meat

– 4 cups cooked chickpeas (about one 28-ounce can), drained with 1 cup of the reserved liquid

– 2 teaspoons ground cumin

– 1 minced ancho or chipotle chile (or 1 teaspoon chile powder)

– 2 teaspoons minced garlic

– Salt and pepper to taste

– 1 tablespoon extra virgin olive oil

– Minced cilantro or parsley for garnish


Instructions

1-First, heat a large deep skillet on high and gradually add the meat, breaking it into small pieces until it’s partially browned.

2-Next, add the chickpeas and cook on high heat until they start to brown and pop, which takes about 5 to 10 minutes.

3-Then, stir in the cumin, chile or chile powder, and garlic, cooking for about one minute while mixing everything together.

4-Pour in the reserved cooking liquid and scrape the browned bits from the pan for extra flavor.

5-Reduce the heat to medium-low and keep cooking until the mixture thickens but stays moist, seasoning with salt and pepper as needed.

6-Finally, stir in the olive oil, adjust the seasoning if it needs more punch, garnish with cilantro or parsley, and serve right away with rice or pita bread.

Notes

🍗 Substitute ground turkey, chicken, or pork and add oil if meat is lean.
🌶️ Increase chile quantity for preferred heat; consider spices like turmeric, saffron, or garam masala for variety.
