Ingredients

– 2 ounces full-fat brick cream cheese softened to room temperature

– 2 tablespoons confectioners’ sugar

– 1/3 cup pumpkin puree

– 1 and 3/4 cups graham cracker crumbs (approximately 12 full sheet graham crackers)

– 1/2 teaspoon pumpkin pie spice

– 1/2 teaspoon ground cinnamon

– 4 ounces white chocolate coarsely chopped and melted

– 10 ounces semi-sweet or white chocolate for the topping

– Extra graham cracker crumbs for optional garnish

– Cinnamon-sugar mixture for optional garnish


Instructions

1-Beat the 2 ounces of softened full-fat brick cream cheese with 2 tablespoons of confectioners’ sugar until it becomes creamy and smooth.

2-Add 1/3 cup of pumpkin puree to the mixture and blend until fully combined, creating a base that’s rich in flavor.

3-Incorporate 1 and 3/4 cups of graham cracker crumbs, 1/2 teaspoon of pumpkin pie spice, 1/2 teaspoon of ground cinnamon, and 4 ounces of melted white chocolate, then beat until you get a soft and thick mixture.

4-Refrigerate the mixture for at least 1 hour or up to 24 hours to make it easier to handle this step is crucial for shaping.

5-Shape the chilled mixture into balls using about 1 teaspoon per ball, then chill them again for 30 minutes to 24 hours for firmness.

6-Melt 10 ounces of semi-sweet or white chocolate and let it cool slightly before dipping the chilled balls.

7-Dip each ball into the melted chocolate, tap off any excess, and sprinkle with extra graham cracker crumbs or a cinnamon-sugar mixture if desired.

8-Place the coated truffles on lined baking sheets and refrigerate until the chocolate sets, which usually takes a short time.

9-Serve the truffles at room temperature for a few hours, and remember they taste even better after sitting in the fridge for one or two days.
