Ingredients

– 1 tablespoon coarse Kosher salt

– 1 tablespoon chili powder

– 1 tablespoon paprika (smoked preferred, but sweet or hot paprika can be used)

– 1/2 tablespoon ground black pepper (freshly ground preferred; peppercorn blend optional)

– 1/2 tablespoon onion powder

– 1/2 tablespoon garlic powder

– Dash of cayenne pepper (optional and mild)

– 1 tablespoon brown sugar (only use when smoking or roasting; omit if frying)


Instructions

1-In a small bowl, mix all dry ingredients thoroughly to create your spice blend.

2-Spread the spice blend evenly over the turkey, making sure to cover it under the skin for deeper flavor.

3-For different cooking methods, adapt as follows: apply the dry rub on skin that’s been patted dry if frying; use the same dry rub for smoking on a dried turkey; or for roasting, mix the rub with about 1/2 cup (115 grams) softened unsalted butter per 12-pound (5.4 kg) turkey to make a wet rub, applying most under the skin and some on top for browning.

4-Roast, fry, or smoke the turkey based on your choice, aiming for even cooking.
