– 2 cups (240g) flour

– 1 teaspoon baking powder

– 1/2 teaspoon table salt

– 1 cup (227g) sour cream or plain yogurt, at room temperature

– 1/2 cup (99g) granulated sugar

– 2 teaspoons cinnamon

– 2 teaspoons vanilla extract

– 1/2 cup (57g) chopped walnuts or pecans, optional


Instructions

1-Preheat your oven: Begin by preheating your oven to 350°F and greasing a 9 1/2-inch tube pan or 9-inch square pan for even baking. This preparation takes just about 15 minutes, leading to a total time of around 55 minutes.

2-Prepare the batter: In a large bowl, beat together the softened butter, sugar, and eggs until smooth and creamy. In another bowl, mix the flour, baking powder, baking soda, and salt to ensure even distribution. Add the dry ingredients to the butter mixture alternately with the sour cream or yogurt, stirring gently after each addition to keep the batter light.

3-Prepare and assemble topping and batter: Next, combine the topping ingredients until crumbly for a delicious crunch. Spread half of the batter in the prepared pan, sprinkle with half of the topping, and repeat with the remaining batter and topping.

4-Bake and serve: Bake for 30 to 40 minutes, checking with a toothpick it should come out clean or with a few moist crumbs. Let the cake cool in the pan for 10 minutes if using a tube pan, then serve it warm or at room temperature.
