Ingredients

– 4 bone-in, skin-on chicken thighs

– 2 teaspoons granulated garlic

– 1 teaspoon paprika

– 1 teaspoon oregano

– 1/4 teaspoon chili powder

– Salt, to taste

– Pepper, to taste

– 1 cup all-purpose flour (for coating and roux)

– 2 tablespoons olive oil (for browning)

– 1 small onion, chopped

– 2 cloves garlic, minced

– 2 tablespoons butter

– 2 cups chicken broth

– 1/2 cup heavy cream

– A pinch of crushed red pepper (optional)

– Fresh parsley (for garnish)


Instructions

1-First, prepare all ingredients: Chop the onion and mince the garlic, then pat dry the 4 bone-in chicken thighs. Season the chicken with a blend of 2 teaspoons granulated garlic, 1 teaspoon paprika, 1 teaspoon oregano, 1/4 teaspoon chili powder, plus salt and pepper to taste. Mix these spices into 1 cup of all-purpose flour and coat the chicken evenly.

2-Second, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Brown the chicken for 4-5 minutes per side until golden, then set it aside. For a variation, check out my taco casserole recipe for another fun chicken idea.

3-Third, in the same skillet, sauté 1 small chopped onion for 2-3 minutes until translucent. Add 2 minced garlic cloves and an optional pinch of crushed red pepper, cooking for about 20 seconds while seasoning with salt and pepper.

4-Fourth, add 2 tablespoons butter and 1 tablespoon of the seasoned flour to the skillet, stirring for 1-2 minutes to form a roux. Gradually whisk in 2 cups of chicken broth and cook for 2-3 minutes until it thickens.

5-Fifth, stir in 1/2 cup heavy cream and adjust seasoning as needed. Return the browned chicken to the skillet with the sauce.

6-Sixth, bake in a preheated oven at 425°F (220°C) for 1 hour until fully cooked.

7-Finally, garnish with parsley before serving, yielding a rich dish with 513 calories per serving, including 31 grams carbohydrates, 21 grams protein, 33 grams fat, 14 grams saturated fat, and 150 mg cholesterol.
