Ingredients
– 1 cup of flour
– 2 eggs
– 1/2 cup of sugar
– 1 teaspoon vanilla extract
– 1/4 cup of milk
– 2 tablespoons of butter
– 1/2 teaspoon of baking powder
– A pinch of salt
Instructions
Preheat the oven: Preheat your oven to 350°F (175°C).
Prepare the chicken: Season both sides of the chicken breasts with salt and pepper. Place flour in a shallow dish and dredge the chicken, shaking off any excess.
Sear the chicken: In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
Make the sauce: In the same skillet, add minced garlic and cook until fragrant, about 30 seconds. Deglaze the skillet with chicken broth and lemon juice, scraping up any brown bits from the bottom of the pan.
Combine and cook: Return the chicken to the skillet and spoon some of the sauce over the top. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
Garnish and serve: Remove the skillet from the oven and sprinkle chopped parsley over the chicken. Serve immediately, with sauce from the skillet spooned over the top.
