1 lb white or brown mushrooms

68 oz bacon, chopped

1 small/medium onion, chopped

2 cups (about 150 g) smoked gouda cheese, finely grated

1 cup (about 113 g) mozzarella cheese, finely grated


Instructions

1-Clean the mushrooms: Gently wipe the mushrooms with a barely damp paper towel to clean them without adding extra moisture that could make them soggy.

2-Remove stems and hollow out mushrooms: Remove the mushroom stems and hollow out the centers using a melon baller or teaspoon to create space for the yummy filling.

3-Prepare the cheese mixture: In a bowl, mix the smoked gouda and mozzarella cheeses together, but save about a quarter of this cheese mixture for later.

4-Cook bacon and onion: SautΓ© the chopped bacon and onion over medium-high heat for 5-7 minutes until the bacon is cooked and browned; stir often to keep the onions from burning.

5-Combine bacon mixture and cheese: Once done, transfer the bacon and onion to a bowl, toss out any excess fat, and let it cool to room temperature. Combine this cooled mixture with the larger part of the cheese blend to make your stuffing.

6-Fill mushrooms: Fill each mushroom cap with about one heaping tablespoon of the cheese and bacon mixture, then top it off with the reserved cheese.

7-Bake mushrooms: Pop them in the oven at 400˚F (200˚C) for about 8 minutes until they’re soft and juicy, but not mushy.
