Ingredients

35 medium-large Russet potatoes (depending on servings)

3 tablespoons olive oil, divided

1 small white or yellow onion, diced

Kosher salt and pepper, to taste

1 pound ground turkey

1 teaspoon chili powder

1 teaspoon garlic powder

1 1/2 cups BBQ sauce of choice

1 1/2 cups ketchup

7 ounces tri-color coleslaw (about 2 cups)

1 zucchini, julienned

green onions

cherry tomatoes

cheddar cheese

sour cream

parsley


Instructions

1-Preheat oven to 425°F and line a baking sheet with parchment paper. Wash, dry, and pierce potatoes with a fork several times, then rub with some of the olive oil and kosher salt.

2-Bake potatoes for 40-60 minutes until they are fork tender. While they bake, heat the remaining olive oil in a deep sauté pan.

3-Sauté the diced onion for 3-5 minutes until fragrant, seasoning with salt and pepper to bring out those amazing flavors.

4-Add ground turkey and cook until no longer pink, then stir in chili powder and garlic powder for an extra kick.

5-Mix in BBQ sauce and ketchup, followed by tri-color coleslaw and julienned zucchini. Stir well and bring to a gentle simmer, adding water if the sauce is too thick.

6-Once potatoes are done, cut them lengthwise and stuff with the sloppy joe mixture. Garnish as desired and serve hot it’s that simple!
