1 pound (450g) medium pasta shells or elbow macaroni, cooked and drained
1 small yellow onion, finely diced
2 cloves garlic, minced
1 cup ketchup
2 tablespoons yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste (optional)
1/2 teaspoon paprika
1/4 teaspoon smoked paprika (optional)
Salt and black pepper to taste
2 cups (480ml) low-sodium beef broth
2 cups (480ml) milk (whole or 2%)
1/4 cup (60g) cream cheese (optional for extra creaminess)
1 tablespoon olive oil or butter (optional)


Instructions

1. Brown the ground beef over medium-high heat, breaking it into small crumbles until no pink remains; drain excess fat, leaving about a tablespoon for flavor.
2. Add diced onion and minced garlic to the beef; cook for 3-4 minutes until softened and fragrant.
3. Stir in ketchup, mustard, Worcestershire sauce, tomato paste (if using), paprika, smoked paprika, salt, and pepper; cook for 2-3 minutes to blend flavors.
4. Pour in beef broth and milk, stir well, then add the pasta shells and press them gently into the liquid.
5. Cover and simmer over medium-low heat for 10-12 minutes, stirring occasionally until the pasta is tender and most of the liquid is absorbed.
6. Cube or shred the cheese(s) and add to the pan along with cream cheese (if using), stirring frequently until fully melted and creamy. If the sauce is too thick, thin it with reserved pasta water, extra milk, or broth.
7. Simmer on low heat for about 5 more minutes, stirring occasionally to let flavors meld and the sauce thicken.
