Ingredients

– 2 tablespoons butter

– ½ cup finely chopped onion

– 2 large garlic cloves, finely chopped

– 2 tablespoons all-purpose flour

– 2 cups 33% reduced sodium chicken stock

– ½ cup half and half or whole milk for a lighter version

– 1 teaspoon Italian seasoning

– ¼ to ½ teaspoon salt

– ¼ teaspoon pepper powder

– ⅛ teaspoon red pepper flakes

– ¾ pound raw peeled, deveined shrimp (thawed if frozen)

– 2 handfuls baby spinach

– ¼ cup grated parmesan cheese


Instructions

1-First Step: Melt 2 tablespoons of butter in a medium pot over medium heat and sauté the onion and garlic for about 3 minutes.

2-Second Step: Add 2 tablespoons of all-purpose flour and stir constantly for 1 to 2 minutes.

3-Third Step: Stir in 2 cups of chicken stock, ½ cup of half and half or milk, 1 teaspoon Italian seasoning, ¼ to ½ teaspoon salt, ¼ teaspoon pepper powder, and ⅛ teaspoon red pepper flakes.

4-Fourth Step: Bring the mixture to a gentle simmer and cook for 3 to 4 minutes until it thickens slightly.

5-Fifth Step: Add the shrimp, baby spinach, and parmesan cheese, then cook for another 3 to 4 minutes until the shrimp is cooked through and the spinach wilts.

6-Final Step: Serve the soup hot, perhaps with a sprinkle of extra cheese or herbs.

Notes
