Ingredients

– 1.5 pounds colossal shrimp (size 12-15 count) peeled and deveined

– 1/3 cup plain breadcrumbs

– 1 tablespoon lemon juice

– 6 garlic cloves minced

– 2 tablespoons grated hard cheese

– 2 tablespoons minced flat-leaf Italian parsley

– 2 teaspoons dried oregano

– 1/2 teaspoon crushed red pepper

– 1/2 teaspoon kosher salt

– Salt and pepper for seasoning the shrimp

– 3/4 cup low-sodium chicken stock

– 1/4 cup dry white wine optional

– 6 tablespoons unsalted butter cut into cubes

– Additional extra virgin olive oil for drizzling

Instructions

1-Preheat and Prep: Heat your oven to 425°F. Season the 1.5 pounds of colossal shrimp (peeled and deveined) with salt and pepper. Arrange them in a baking dish.

2-Mix the Topping: In a bowl, combine 1/3 cup plain breadcrumbs, 3 tablespoons extra virgin olive oil, 1 tablespoon lemon juice, 6 minced garlic cloves, 2 tablespoons grated hard cheese, 2 tablespoons minced flat-leaf Italian parsley, 2 teaspoons dried oregano, 1/2 teaspoon crushed red pepper, and 1/2 teaspoon kosher salt. Stir until it resembles wet sand for that perfect garlic breadcrumb topping.

3-Assemble: Spoon the herb breadcrumb topping evenly over each shrimp.

4-Add Liquids: Pour 3/4 cup low-sodium chicken stock and 1/4 cup dry white wine (if using) around the shrimp.

5-Top and Bake: Dot with 6 tablespoons cubed unsalted butter and drizzle with a bit more olive oil. Bake for about 10 minutes until shrimp are cooked through (pink and opaque).

6-Broil: Switch to broil for 1-2 minutes to golden-brown the topping. Watch closely to avoid burning.

7-Serve: Plate with lemon wedges and crusty bread. Squeeze lemon over top for zing.
