Ingredients
– 1 cup panko bread crumbs (Japanese-style, larger and crunchier)
– 1Β½ pounds large shrimp (26 to 30 per pound), peeled, deveined, tails removed, divided
– 2 tablespoons mayonnaise
– Β½ teaspoon salt
– ΒΌ teaspoon pepper
– β teaspoon cayenne pepper
– 3 scallions, finely chopped
– 3 tablespoons vegetable oil
– 4 hamburger buns, toasted if desired (brioche buns recommended)
– 4 leaves Bibb lettuce
Instructions
1-Pulse panko bread crumbs about 15 times in a food processor until finely ground; transfer to a shallow dish.
2-In the empty food processor, pulse one-third of the shrimp (about 1 cup) with mayonnaise, salt, pepper, and cayenne pepper about 8 times until finely chopped.
3-Add remaining shrimp and pulse about 4 times for a coarse chop, scraping sides as needed. Transfer mixture to a bowl and stir in scallions.
4-Lightly moisten hands and divide shrimp mixture into 4 equal portions, shaping each into a ΒΎ-inch thick patty.
5-Dredge each patty in the ground panko, pressing lightly to coat all sides.
6-Heat vegetable oil in a 12-inch nonstick skillet over medium heat until shimmering.
7-Cook patties 3 to 5 minutes per side until golden brown and internal temperature reaches 140Β°F (60Β°C).
8-Drain cooked patties on paper towels for 30 seconds on each side.
9-Spread tartar sauce on bottom halves of buns, add shrimp patty and Bibb lettuce, then cover with top buns. Serve immediately.
