Instructions

1-First, marinate the pork by whisking together 3 tablespoons olive oil, 2 tablespoons Dijon mustard, 1 tablespoon balsamic vinegar, 2 minced garlic cloves, Β½ to 1 teaspoon paprika, 1 teaspoon sea salt, and Β½ teaspoon black pepper. Toss the 4 pork chops in this mixture and let them sit for about 30 minutes to soak up all that goodness.

2-Next, preheat your oven to 425Β°F (218Β°C) and prepare the potatoes. Toss 1Β½ pounds of cut petite potatoes with 1 to 2 tablespoons olive oil, 1 minced garlic clove, ΒΌ cup grated Parmesan cheese, Β½ teaspoon sea salt, and black pepper to taste. Spread them out in a single layer on a large baking sheet and bake for 20 to 25 minutes until they’re golden.

3-While the potatoes are baking, get the green beans ready. Mix 1 pound of trimmed green beans with 1 tablespoon olive oil, 1 minced garlic clove, 1 to 2 tablespoons grated Parmesan cheese, and salt and pepper to taste.

4-If you’re using bone-in pork chops, add the seasoned green beans and marinated pork chops to the baking sheet with the potatoes. Bake for another 18 to 20 minutes until the pork hits 145Β°F (63Β°C). For boneless pork chops, add the green beans first and cook for 5 minutes, then add the pork and bake for 12 to 15 minutes more.

5-Finally, let the pork chops rest for 5 minutes before serving, and if you want extra crispy potatoes, broil them briefly at the end. This step ensures everything is juicy and flavorful, making your meal a real winner!
