Ingredients
1 cup sugar
1 to 1 1/3 cups light corn syrup
1 to 1 1/3 cups creamy peanut butter (avoid natural)
1 teaspoon vanilla extract (optional)
6 cups crispy rice cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
Instructions
1. Prepare a 9×13-inch pan by lining it with parchment paper or greasing it with butter or nonstick spray.
2. Combine sugar and corn syrup in a large saucepan over medium heat. Stir until the sugar dissolves. Avoid boiling to prevent hardening.
3. Remove from heat and stir in peanut butter and optionally vanilla extract. Mix until smooth.
4. In a large bowl, combine the cereal with the peanut butter mixture, ensuring it’s evenly coated. Press the mixture into the prepared pan.
5. Melt chocolate and butterscotch chips together, either in the microwave or over the stove, stirring until smooth. Spread evenly over the cereal mixture.
6. Allow to cool at room temperature before cutting into bars for easier slicing.
