Ingredients

– 12 ounces smoked sausage sliced into ½-inch rounds

– 1 pound baby potatoes cut into 1-inch pieces

– 1 red bell pepper sliced into 2-inch sticks

– 1 cup diced yellow onion (about half a medium onion)

– 3 tablespoons olive oil

– 1 teaspoon garlic powder

– 1 teaspoon oregano

– 1 teaspoon parsley

– ½ teaspoon salt, adjusted to taste

– ½ teaspoon pepper, adjusted to taste


Instructions

1-First, heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Add the 1 pound of baby potatoes cut into 1-inch pieces, along with 1 teaspoon each of garlic powder, oregano, and parsley, plus ½ teaspoon each of salt and pepper. Stir frequently until the potatoes turn tender and browned, which takes about 15 minutes.

2-Once done, remove the potatoes and set them aside. In the same skillet, cook the 12 ounces of smoked sausage sliced into ½-inch rounds, 1 cup of diced yellow onion, and 1 red bell pepper sliced into 2-inch sticks until the vegetables soften, about 5 minutes. Finally, return the potatoes to the skillet, mix everything together, and cook for a few more minutes before serving.
