Description

🍬 Experience the perfect harmony of sweet and spicy with Salted Caramel Ginger Macarons, combining delicate almond shells with rich caramel and a hint of ginger.
🌿 These elegant treats offer a unique twist for macaron lovers looking to indulge in festive flavors with a touch of warmth.

Ingredients

– 200 grams confectioners sugar

– 115 grams almond flour

– 1 teaspoon ground ginger

– 120 grams egg whites at room temperature

– 1/4 teaspoon salt

– 45 grams granulated sugar

– 2-3 drops yellow gel food coloring

– 14 ounces caramel bits or soft vanilla caramels

– 2 tablespoons heavy cream

– coarse sea salt

– 6 ounces white chocolate

– 1 tablespoon finely chopped candied ginger

Instructions

1-First, gather and measure all ingredients carefully. Ensure egg whites are at room temperature for optimal whipping.

2-Second, sift almond flour and confectioners sugar together to remove lumps and create a fine mixture for smooth shells.

3-Third, whip the egg whites with granulated sugar to stiff peaks, adding the yellow gel food coloring for a vibrant touch.

4-Fourth, gently fold the dry ingredients, ground ginger, and salt into the meringue to maintain airiness while blending flavors.

5-Fifth, transfer the batter into a piping bag and pipe uniform circles onto a lined baking tray.

6-Sixth, let the piped batter rest for 30-60 minutes until a skin forms.

7-Seventh, preheat the oven to 150°C (300°F) and bake for 15-18 minutes, rotating the tray halfway through.

8-Eighth, cool the macarons completely before handling.

9-Ninth, prepare the filling by melting caramel bits with heavy cream and mixing in coarse sea salt.

10-Final step, assemble by sandwiching the filling between shells and topping with melted white chocolate and candied ginger. Chill for 24 hours for the best taste.

Notes

🎨 Use gel food coloring to avoid thinning the batter and achieve vibrant color.
👌 Allow macarons to rest before baking to develop a smooth glossy shell and feet.
🥄 Melt caramel gently and cool before filling to avoid softening the shells.
