Ingredients
– 1 pound fresh tomatillos, husks and stems removed
– 2 small garlic cloves
– 1 jalapeño or serrano pepper, with stem removed (seeds optional for heat preference)
– 1 little gem lettuce or one large leaf of Romaine
– Juice of 1 fresh lime (about 2 tablespoons)
– 1 medium avocado, peeled and pitted
– 1 cup packed fresh cilantro leaves
– 1/3 cup diced white onion (or red/yellow onion)
– 1/4 cup water
– 1 teaspoon fine sea salt
– 1/4 teaspoon ground cumin
Instructions
1-First, prepare the ingredients by husking and washing the 1 pound of fresh tomatillos to remove any residue, then rinse the 1 cup packed fresh cilantro leaves and dice the 1/3 cup white onion.
2-Next, remove the stem from the 1 jalapeño or serrano pepper, deciding on seeds based on your heat preference, and peel the 2 small garlic cloves.
3-Now, add the prepared tomatillos, garlic, pepper, 1 little gem lettuce or one large leaf of Romaine, juice of 1 fresh lime (about 2 tablespoons), 1 medium avocado, cilantro, onion, 1/4 cup water, 1 teaspoon fine sea salt, and 1/4 teaspoon ground cumin into a blender or food processor.
4-Blend or process the mixture until it’s smooth, then taste and adjust seasonings as needed for the perfect balance.
5-Finally, transfer to a bowl and refrigerate for a bit to let the flavors meld, making it ready for serving with your favorite dishes.
