Instructions

1-Getting started with roasted herb chicken: First, preheat the oven to 400Β°F (200Β°C) to set the stage for crisp, golden skin. Pat the chicken dry with paper towels, remove any giblets, tuck the wing tips under the breast, and tie the legs together with kitchen twine for even cooking.

2-Next: Mix the melted butter, salt, pepper, and 1 Tbsp of chopped thyme, then rub this blend all over the chicken, including under the skin for extra flavor. Stuff the cavity with the garlic halves, onion quarters, and the remaining thyme sprigs to infuse everything with aroma. Place the chicken breast-side up in a shallow roasting pan and slide it into the oven.
