Ingredients
2 cups chopped rhubarb

1 beaten egg (for egg wash)
Powdered sugar or turbinado sugar (optional, for finishing)
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a bowl, mix together the chopped rhubarb, granulated sugar, cornstarch, vanilla extract or seeds, and lemon juice. Allow to sit for a few minutes to combine flavors or cook over medium heat until the rhubarb is tender, then cool.
3. Roll out the puff pastry sheet and cut into squares.
4. Place a spoonful of the rhubarb filling in the center of each square.
5. Brush the pastry edges with a beaten egg.
6. Fold the pastry over to create a pocket and seal the edges with a fork.
7. Pierce the top of each pocket to allow steam to escape.
8. Optionally chill the pockets in the fridge for 10-15 minutes before baking.
9. Bake in the preheated oven for 18 to 25 minutes, until golden and puffed.
10. Cool slightly before serving, and optionally sprinkle with powdered or turbinado sugar.
